Coffee-Rubbed Tuna Steak
Tuna steaks, appropriately named for their meaty flavor and texture, are best cooked rare.
- 2 4-oz High-Quality Tuna Steaks
- Extra-virgin olive oil
- 3 tbsp finely ground coffee
- 1 tbsp Freshly ground black pepper
- 1 tsp Sea Salt
- 1/2 tsp Ground Cinnamon
- 1/2 tsp Chili Powder
Brush the tuna steaks with olive oil.
In a small bowl, combine the coffee, pepper, salt, cinnamon, and chili powder.
Sprinkle the coffee mixture over both sides of the tuna steaks and let them rest, bringing them to room temperature, for about 30 minutes.
Brush the tuna steaks with more olive oil. In a medium skillet, sear the tuna on both sides over high heat until a crust forms and the fish reaches your preferred doneness, 2 to 3 minutes per side for rare.
